The Story

Cedar Valley born. Fire obsessed. No shortcuts.

It Started With a Grill and a Few Good Friends

Back in college, Schmity didn't set out to build anything. He just liked to grill. Fire up the coals, invite some friends over, see what happens. What happened, it turned out, was pretty damn good food — and a room full of people who kept coming back for more.

That was all the signal he needed. What started as a weekend hobby slowly became an obsession. He dug into the science of smoke, the chemistry of a proper bark, the difference between a rub that's just salty and one that actually does something. He burned things. He nailed things. He kept going.

Born and raised in the Cedar Valley of Iowa, Schmity still works in the sales and marketing of ag and construction equipment — and he'll tell you it's one of the best industries there is. The people are genuine, no-nonsense, and they don't have time for anything that doesn't actually work. You earn their respect by being straight with them, or you don't earn it at all. That mentality doesn't clock out when the workday ends.

Nobody here is pretending. These are real recipes, cooked on real grills, built on years of trial and error and a genuine love of feeding people well. If it's on this site, it's because it works — full stop.
